A four-year member of the Purple Eagles, Watkins has played in 150 of Niagara's 152 games since the 2017 season. She also served as co-captain in both her junior and senior seasons.
 
Watkins started all 10 games in 2020, batting .242 with an RBI, two walks, and four runs scored.
 
She played in and started 48 games as a junior, batting .254 with 32 runs scored, 23 RBI, 32 walks, and six home runs. In a doubleheader at Fairfield, Watkins went 3-for-6 with three runs scored and five RBI. She hit one home run in each game, including a grand slam in the second. She hit her second grand slam of the year in a doubleheader against Manhattan just two weeks later. She also crossed the plate three times and smacked her first career postseason home run in the MAAC Tournament against Iona on May 8.
 
As a sophomore, Watkins posted a .268 batting average, .386 on-base percentage, with five home runs, 23 RBI, and 28 runs scored.
 
Watkins' freshman season was a memorable one, and wrapped with her landing a spot on the MAAC's All-Rookie Team. She started all 45 games, hit.320, and was fifth in the MAAC with a .447 on-base percentage. Watkins also went yard a team-high seven times, and drew a program-record 27 walks. In conference play, she led all MAAC rookies in batting average (.381), slugging percentage (.651), home runs (four), and RBI (17) in 20 conference contests. At Syracuse on April 18, Watkins uncorked a two-run homer that proved to be the game-winner as Niagara earned its first-ever win over the Orange.
 
A two-time MAAC All-Academic selection, Watkins has served two semesters Hyde Park Elementary as a counselor. She will be attending Alfred University to pursue her master's in psychology, and staying involved in college athletics as a graduate assistant on the Saxons' softball coaching staff.
